Skate is regularly wild-caught by New England fishermen and is sustainably managed and responsibly harvested under US regulations. 

Skate is a protein rich seafood low in cholesterol, sodium and fats. With a mild, ocean flavor and texture similar to a scallop, skate is traditionally pan fried in brown butter served and capers.
